Criollo beef comes from cattle of Spanish origin, specially adapted to hot, arid climates. These cattle are smaller and lighter framed than traditional beef breeds.
They utilize natural feedstuffs well and consume considerably less feed than traditional English breeds. Criollo beef is very tender due to its fine muscle fibers, it is low in fat and cholesterol and high in protein and Omega 3’s.
Grass fed vs Grain fed
Not all “red meat” is the same! What an animal is fed has a profound impact on the meat. Beef from a grass fed animal almost half the fat content as beef from a grain finished animal. In fact, grass fed beef has about the same amount of fat as skinless chicken or wild elk.[1] Meat this lean can actually lower your LDL cholesterol levels. [2] Grassfed beef is also lower in calories than grain fed. A 6 oz. grass fed steak has almost 100 fewer calories than the same cut from a grain fed animal!
